Recipe for Mini Strawberry Shortcakes

Mini Strawberry Shortcakes

You will need:

1 – 2 pints of fresh strawberries – cut some flat, and then cut some with just the top cut off

Use premade Vanilla custard or pudding or you can make your own

Cool whip

Premade mini angel food cakes – usually come 6 in a pack

Directions:

So make the pudding or custard as per the instructions but make sure its cool before making the dessert.

Take one of the mini angel food cakes and cut a whole about halfway down so its hollowed out.

Put in a layer of the vanilla pudding – not too thick

Then a layer of the flat cut strawberries.

Then cut the hollowed out piece to half its thickness and put that in.

Then a lay of the cool whip on top. – make sure the cool whip is as frozen as can be.

Then you are going to top it with strawberries, once you do put the dessert back in the freezer to chill, otherwise the cool whip won’t hold the strawberries.

If your mini cakes have a wrapping around them, don’t take it off until just prior to serving your dessert.

And finish with a sprinkle of icing sugar on the top.
